The only thing that pops up in my mind, the next second I wake up is what to cook for breakfast. I love eating breakfast. Give me nothing for the whole day, just a good breakfast is all I need to boost my full day’s energy. Omelettes are the essential element of a dining table for breakfast and I tried it differently today. I sauteed mushrooms mixed with olives and coated with cheese which were then sandwiched in omelette to give a good Mediterranean flavor. The aroma and taste I got was savoury.

Ingredients
3 eggs
7 green olives
4 button mushrooms
15 grams Cheddar cheese
15 grams Mozzarella cheese
1 teaspoon butter
1 teaspoon oil
¼ teaspoon salt
¼ teaspoon black pepper
How to Make Olive Mushroom Cheese Omelette
Slice olives and mushrooms & beat eggs: Take 7 to 8 olives and 4 button mushrooms, slice them finely. Keep it aside for further steps. Break 3 eggs in a bowl, add ¼ teaspoon of salt and black pepper and beat it well. Keep it aside for next steps.
Sautee mushrooms: In a pan take 1 tablespoon of oil and heat it on medium flame. Add mushrooms and sautee until you feel mushrooms are done and light golden brown in color. Plate it out for next step.
Cook egg batter: In a pan, take 1 teaspoon of butter and melt it. Add egg batter and cover it on low flame. Let the egg cook 40%. Make it cloudy a little using a spatula. Cover it again to cook 80%.
Adding cheese, mushrooms and olives (phase-1): Once the egg is cooked 80%, add sautéed mushrooms and olives on one half.
Adding cheese, mushrooms and olives (phase-2): Top it with 15 grams of cheddar and Mozzarella cheese. Cover it and let the cheese melt.
Fold egg: Once the cheese melts, fold the egg into half. Cover and cook it for 3 Minutes.
Ready to serve: Olive-Mushroom Cheese Omelette is ready to serve. Dish it out, garnish with oregano and enjoy eating yummy cheesy breakfast!
Pro Tips
- Cook eggs according to your choice, if you want it in French style don’t cook completely, leave it a little juicy. I have cooked it completely.
- Saute mushrooms on medium to low flame.
- Adjust spices according to your taste.
- Oregano garnishing is completely optional.
