Another beautiful morning with bright sunshine giving these winter days a cozy environment. I woke up with thoughts of kids’ food in my mind. New mommies can truly understand my struggle these days, when you’re a mom of a baby and a toddler you would do anything in this world to make your kids eat food, the toughest part of mommy hood. My husband is working from home today obviously we don’t get that everyday so it’s a day to cook something special and when you’re cooking for both (Husband & kids) you go for something special in the recipe but with light spices. Here I’m again with the recipe that I tried today: CAJUN CHICKEN SCHNITZEL. Breast chicken pieces were coated with seasonings and crumbs to get light spiced crunchy chicken you would love to eat, let’s get into the recipe.

Ingredients
500 grams Chicken breast pieces
1 cup Milk
1 teaspoon Cayenne powder
1 teaspoon Garlic powder
1 tablespoon Cajun seasoning
1 teaspoon Paprika powder
250 grams All purpose flour
2 eggs
250 grams Breadcrumbs
Vegetable oil (deep frying)
1 avocado (dice chopped)
1 small tomato (dice chopped)
1 large lemon (wedge cut)
How to Cook Cajun chicken schnitzel
Escaloping chicken breast pieces: Take 500 grams chicken breast, apply a layer of cling sheet over it and escalope it. Keep all escaloped pieces aside for the next step.
Preparing coating for chicken pieces:
– Take 1 cup milk in a bowl, add 1 teaspoon cayenne powder, 1 teaspoon garlic powder, 1 tablespoon Cajun seasoning, 1 teaspoon paprika powder and mix it all.
– Take 2 eggs in a bowl and beat them well.
– Take 250 grams of all purpose flour in a container.
– Take 250 grams of breadcrumbs in a container. Assemble these four coatings side by side for the next step.
Chicken coating: Take one escaloped chicken piece, dip in prepared milk mixture first then coat with all purpose flour. Next dip in beaten eggs and finally coat with breadcrumbs. Keep it aside. Repeat it for all chicken pieces and put them to rest for at least 10 minutes.
Cutting: Take 1 medium avocado and tomato, dice chop them both and mix for side serving. Take 1 large lemon and cut it in wedges. Keep it aside for the next step.
Frying: Take enough vegetable oil in a pan for deep frying, heat it and add coated chicken. Fry chicken on medium flame until chicken is tender and breadcrumbs become crispy and golden brown. Here your Cajun chicken schnitzel is ready to serve.
Serving: Serve Cajun chicken schnitzel with tomato-avocado salad and lemon wedges. Squeeze half lemon on chicken.

Pro Tips
- Don’t fry chicken on high flame as it can burn breadcrumbs and chicken would be left uncooked.
- While frying you can check the tenderness of chicken using toothpicks.
