Alfredo Fettuccini Pasta Recipe

Waking up with a midday nap, woke up with gratitude for my husband and kids as they are the biggest power and blessing. It takes me a while to settle down kids after a nap as they need cuddles on repeat. Last night we decided to cook Alfredo fettuccini which we as a whole family loves to eat. We engaged kids with their toys and started recording the recipe.

250 grams fettuccine pasta

1/2 cup milk

1 tablespoon cream cheese

50 grams parmesan cheese

1 teaspoon black pepper

2 teaspoons salt

6 cloves chopped garlic

350 grams Chicken breast

1 teaspoon soya sauce

1 teaspoon chili sauce

1 teaspoon vinegar

2 teaspoons chicken tikka powder

2 teaspoons all purpose flour

1 teaspoon lemon juice

1 teaspoon chicken powder

How to Make Alfredo Fettuccini Pasta Recipe

BOILING PASTA: Boil some water with 2 teaspoons of salt, wait until it reaches boiling point and then add fettuccine pasta. Boil it properly and keep 1 cup of pasta water aside for later use. Drain the water and rinse cold water through it to avoid clumps. Grease with oil and put it aside.

 CHICKEN MARINATION: Take 2 chicken breasts and marinate it with 1 tsp of lemon, 2 tsp of chicken tikka powder, ½ tsp of salt, soya sauce, vinegar and chili sauce. Mix them all well and keep it marinated for at least half an hour.

 PAN SEARING CHICKEN: Now take a pan, add 2 tsp of oil and add marinated chicken. Keep the flame low, cover it and let it cook until you smell the good aroma of tikka chicken. Keep changing the sides.

ALFREDO SAUCE PREPARATION: Time to prepare Alfredo sauce for that we need a pan. Add 2 tsp of butter, melt it. Add chopped garlic and cook until golden brown. Further add 2 tsp of all purpose flour and roast it until golden brown. Now add milk according to requirement, grated Parmesan cheese, cream cheese, 1 tsp of chicken powder, 1 tsp of black pepper and pasta water. Let it cook until thick creamy texture sauce, which is Alfredo sauce.

MIXING ALFREDO SAUCE & FETTUCCINE: Once the sauce is ready, now is the time to add boiled fettuccine pasta in the sauce and mix well. Add 1 tsp of oregano, cover and cook for 3 to 4 mins.

Time to Serve:  Cut chunks of chicken breasts prepared in step 2. Arrange Alfredo fettuccine and chicken breast chunks.

Pro tips

  • In case you don’t like spicy food, marinate chicken breast with salt and lemon juice. 
  • You can add more milk according to the requirement, to make pasta more saucy.  
  • Don’t overcook fettuccine pasta.
