Ever wonder what makes Italian dishes so fascinating? For me the saucy look and the indulgence of fresh and high quality flavours together, always convince me of trying different Italian recipes over and over again.  As an Italian cuisine lover I’m always thinking about recreating authentic Italian recipes in a halal way. The juicy look of bucatini Amatriciana made me try and recreate it with slight changes.

Why bucatini not spaghetti? Bucatini is a type of spaghetti but with hollow space inside. So the idea of choosing bucatini over spaghetti is to settle the richness  of Amatriciana sauce all over deeply. 

I have replaced guanciale with schnitzel chicken and the success I got is irresistible. The crunchiness in Amatriciana sauce takes you to the next level.

Ingredients

100 grams Bucatini pasta

200 grams Schnitzel chicken

3 tablespoons Extra virgin olive oil

1 medium tomato (chopped)

2 ladles tomato paste

1 teaspoon black pepper

1 teaspoon chilli flakes

3 teaspoons salt 

25 grams coriander

25 grams Parmesan cheese

How to Make Bucatini Schnitzel Amatriciana

Boiling Bucatini Pasta: Boil water in a pan with 2 teaspoons of salt and add bucatini pasta. Once bucatini is boiled, keep 1 cup of pasta water aside for Amatriciana sauce.

Frying Schnitzel Chicken: Take oil in a pan for deep frying, heat it up on high flame once the oil gets heated up, slow down the flame and add schnitzel chicken, fry it on medium low flame. Once you’re done with frying, cut the schnitzel chicken pieces into chunks. Keep it aside for the next step.

Amatriciana Sauce:
(a). In a pan heat 3 tablespoons of extra virgin olive oil, add 1 medium chopped tomato and cook it until soft. 
(b). Add 2 ladles tomato paste in cooked tomatoes with 1 teaspoon of salt, black pepper and chilli flakes. Mix it all well!
(c). The sauce may be thick, make it light and perfect in texture by adding half cup of pasta water. Mix it all well and let it simmer for 2 minutes and your sauce is ready!

Mixing Boiled Bucatini in Amatriciana Sauce: Once the sauce is ready, add boiled bucatini and toss it well. Add 50 grams of schnitzel chicken chunks in the pasta and let it simmer for 2 minutes covered.

Serving: Dish out pasta and garnish with Parmesan cheese right before serving, a few chunks of chicken and coriander on the side.

Bucatini Schnitzel Amatriciana is ready to eat.

Pro Tips

  • Don’t fry schnitzel chicken on high flame. Keep it medium low. 
  • It is preferred to boil bucatini and cook Amatriciana sauce side by side. Adding pasta directly from the boiling pot gives you amazing texture.
