We had a little birthday gathering at my place because this was my son’s second birthday. I made sure to prepare everything perfectly and keep the menu unique. I cooked something that anyone didn’t tried before and it turned out to be amazing as everyone loved the taste of food. One recipe among them was Lemon butter feta spaghetti. I gave spaghetti beautiful flavours of lemon, butter, feta cheese, Parmesan cheese and cream and what I got one doesn’t deny eating on repeat. Let’s dive into the recipe.

150 grams Spaghetti

2 tablespoons Butter

150 grams Chicken strips

10 to 12 Garlic cloves (chopped)

1 Lemon Juice sacs with pulp

½ Lemon rind

3 Lemons juice

50 grams Cream

1 Chicken stock

50 grams Feta cheese

50 grams Parmesan cheese

1 Chicken stock

2 teaspoons Salt

½ teaspoon Black pepper

50 grams coriander (chopped)

How to Cook Lemon Butter Feta Spaghetti

Boiling spaghetti: Take water in a pan, add 1 teaspoon of salt in it and boil it. Add 150 grams of spaghetti and boil it. Keep aside for later use. Also keep 1 cup pasta water aside to maintain consistency of sauce.

Cutting, chopping & squeezing:
– Take 10 to 12 garlic cloves and chop them finely. 
– Take one lemon, peel it off and cut the lemon rind into thin slices. 
– Take out the inner juice sac of ½ lemon and cut into chunks. 
– Take 3 other lemons and squeeze out their juice.

Lemon cheese sauce preparation (Phase-1): In a pan take 2 tablespoons butter, melt it. Add chopped garlic and cook until golden brown. Time to add lemon rind, cook for 2 to 3 minutes until you feel a nice aroma. Next add 150 grams chicken strips, cook until brown and tender.

Lemon cheese sauce preparation (Phase-2): Add ½ cup pasta water and 1 chicken stock in the chicken mixture, mix it well until chicken stock dissolves. Add 1 teaspoon black pepper, 1 teaspoon salt, 50 grams cream and 50 grams feta cheese. Stir it until the mixture turns into a smooth sauce.

Mixing spaghetti in sauce: Mix boiled spaghetti in prepared chicken sauce. Add lemon juice and lemon juice sacs. Mix it all well. Cover and let it simmer for 3 to 5 minutes on a low flaeme. Garnish spaghetti with chopped coriander leaves & ½ teaspoon black pepper and 50 grams shredded Parmesan cheese.

Serving: Lemon butter feta spaghetti is ready to serve. Dish it out and serve with lemon juice sacs on top.

Pro Tips

  • Lemon rind can be replaced with lemon zest, as rind gives a little bitter taste. 
  • Adjust spices according to your taste.
