Spring comes up with blooming colors giving a very positive and refreshing impact. Colors include a good variety of veggies and in that case you always feel like eating a bunch of vegetables and enjoy cooking something really colorful plus you’re an Italian cuisine lover. I found a perfect recipe that I really wanted to try, pasta primavera which specially depicts spring and freshness whenever discussed. I also recorded a mini vlog which you can find here.

Ingredients
200 grams Farfalle Pasta
3 teaspoons Salt
3 tablespoons Olive oil
1 medium Red Bell pepper
1 medium Yellow Bell pepper
1 medium Onion
7 Garlic cloves
1 medium Zucchini
1 medium Carrot
2 Tomatoes
2 Lemons
100 ml Cream
50 grams Parmesan Cheese
1 teaspoon Black pepper
How to Make Pasta Primavera Recipe
Boiling Farfalle Pasta: Take water in a pan and boil it with 2 teaspoons of salt. On boiling point add Farfalle pasta. Keep the flame medium to match other steps.
Cutting & Chopping: Cut onion, tomatoes, zucchini, carrot and bell peppers in slices. Garlic needs to be chopped finely.
Vegetable Cooking – Phase 1: Take 3 tablespoons of oil in a pan and add slices of onion, cook until translucent. Add chopped garlic until you feel a good cooked aroma of garlic. Next add sliced carrots and zucchini with 1 ladle splash of pasta water. Cook for 3 minutes, cover and let it simmer for 3 more minutes.
Vegetable Cooking – Phase 2: Now add bell peppers and tomatoes, cook them for 2 minutes on full flame. Add 1 teaspoon of salt, ½ teaspoon of black pepper with another one ladle splash of pasta water and mix it well.
Vegetable Cooking – Phase 3: Time to add cream and grate Parmesan cheese in veggies. Mix it well, let it simmer for 5 minutes.

Serve: Pasta primavera is ready to serve now. Put it on a platter and garnish with grated Parmesan cheese. Ready to eat.

- In case you like creamy and saucy pasta, veggies dipped in. You can add 200 ml of cream.
- More veggies can be added like asparagus, peas, broccoli, mushrooms etc.
