It was a bright day, both kids were having a midday nap and I got some free time to cook so I decided to cook something spicy for my husband and tried to experiment a bit differently. I made red sauce pasta without puréed tomatoes so we can call it quick red sauce pasta and recorded it so that people can watch and try as well. I also made a vlog which you can checkout here.

Ingredients for Red Sauce Pasta
500 grams penny pasta
5 tomatoes
10 cloves garlic, chopped
1 small onion
500 grams chicken strips
2 tablespoons butter
1 cube chicken stock
1 tablespoon corn flour
150 grams cheddar cheese
150 grams mozzarella cheese
1 tablespoon soya sauce
1 tablespoon vinegar
1 tablespoon chili sauce
1 teaspoon chili flakes
1 teaspoon black pepper
2 teaspoons salt
1 teaspoon extra virgin olive oil
How to Make Red Sauce Pasta
Peel off Tomatoes: Take 4 to 5 tomatoes, we need to peel off their skin for that we will put them in boiling water with a cut of addition on top for our ease. Boil them for 5 minutes and put them in ice cold water which makes us peel their skin easily. Peel their skin and put them aside for the next step.
Boil Penny Pasta: In the same boiling water of tomatoes we will add 2 teaspoons of salt, let it cook for 2 minutes and add a packet of penne pasta in it. Stir it and boil it until it becomes soft. Strain it and pour some cold water through it. Add 1 tablespoon of oil to make it greasy and non sticky. Keep it aside for further steps.
Preparation of Red Sauce (Phase-1): Chop onion, garlic and also cut strips of chicken. In a pan take 2 tablespoons of butter, melt it and add chopped onion. Stir it until it becomes translucent. Now add chopped garlic, stir it for 2 minutes. Add chicken strips and cook it until chicken becomes soft and tender.
Preparation of Red Sauce (Phase-2): Add a few drops of soya sauce, chili sauce and vinegar according to your taste. Cover it and let it cook for 3 minutes. Add 1 teaspoon of chili flakes and black pepper.
Preparation of Red Sauce (Phase-3): Time to add peeled tomatoes, cover it and let it simmer for 5 minutes. Mash tomatoes using spatula, add chicken stock and 1 tablespoon of cornstarch, mix it well, cover and cook it for 2 minutes now it becomes a red saucy texture.
Mixing Penny Pasta with Red Sauce: Add boiled pasta in chicken sauce, mix it well and add some oregano in it. grate some mozzarella and cheddar cheese on top, cover it and let the cheese melt for 3 to 4 minutes.
Serve: Serve it with a few coriander leaves and your red sauce pasta is ready to eat. Enjoy!
Pro tips
- If you want it to make more saucy then make puree of tomatoes separately and then add them instead of whole peeled tomatoes.
- Chili flakes are optional according to your taste, if you don’t like spicy foods then avoid it.
