It’s Eid-ul-Fitr day 2025, the day Muslims all around the world celebrate after fasting for the blessed month of RAMADAN. This Eid I have tried a lot, experimented a lot and cooked a lot resulting in amazing tastes. Since I got married, on every Eid I try my best to set my dining table with multiple dishes that includes sweet dishes (kheer or sheer khurma) and some mild spicy dishes as a breakfast menu which is eaten right after Eid namaz. This Eid I wanted to go a little bit different from what I did last Eid so I planned to make Tandoori Club Sandwiches, I got juicy smoky tender chicken with cheese layered with crispiness of iceberg, onion and tomatoes.

Ingredients

9 Slice of bread

2 eggs

200 grams boneless chicken

2 tablespoons cooking oil

1 tablespoon tandoori masala

2 lemons

1 teaspoon hot sauce

1 teaspoon vinegar

1 teaspoon soya sauce

1 teaspoon chilli flakes

1 teaspoon coriander powder

1 teaspoon cumin powder

1 teaspoon salt

½ teaspoon black pepper

1 medium onion (sliced round)

1 medium tomato (sliced round)

3 whole leaves of iceberg lettuce

Half cup mayonnaise

2 tablespoons tomato ketchup

3 cheddar cheese slice

How to Make Tandoori Chicken Club Sandwich

Chicken marination: In a bowl add 1 lemon juice, 1 tablespoon tandoori masala, 1 teaspoon hot sauce, 1 teaspoon vinegar, 1 teaspoon soya sauce, 1 teaspoon chilli flakes, 1 teaspoon coriander powder, 1 teaspoon cumin powder and ½ teaspoon salt. Mix it all well and add 200 grams of boneless chicken strips. Massage the marinade into the chicken and let it rest 30 minutes for better absorption.

Sauce preparation: In a bowl, take half cup mayonnaise, 1 lemon juice, 2 tablespoons ketchup, ½ teaspoon salt & pepper. Mix it all well to make sauce.

Cooking eggs: In a bowl break 2 eggs, beat them well with a pinch of salt and black pepper.Greese a pan with butter or add a little oil. Add egg batter, let it cook from both sides. Keep it aside for the next step.

Cooking chicken: Take 2 tablespoons of oil in a pan, heat it  and add marinated chicken. Cook it until it becomes tender and juicy.

Assembling: Arrange all cooked items (chicken, egg, slice cheese, veggies) to assemble and make a sandwich.

 (a). We need to take 3 slices of bread, cut their edges and apply sauce all over the slices.
(b). On the first slice, put a few pieces of chicken and a cheese slice.
 (c). Stack another bread slice with sauce applied on it and add layers of iceberg lettuce, 2 slices of tomato and onion and cooked egg. Add another layer of saucy slice to complete the sandwich. 

Repeat the same process for 2 other sandwiches with 3 layers of bread.

Toasting sandwiches: Grease a griddle or pan with butter, toast sandwich from both sides golden brown and crispy. Bind it with toothpicks to stay in position and  cut it into 4 parts. Time to serve.

Pro Tips

  • Lettuce is optional. Add it according to your taste. 
  • Chicken is spicy to balance non sauteed veggies. If you’re not a spice lover you can half the spice quantities.
