Want some suggestions for an indoor gathering menu? I have something to share, if you’re having some indoor small event at home where food is self prepared. Beef quesadillas can be a perfect part of your menus. I can assure all age groups are gonna love it. Beef mince is cooked with sauteed veggies, few spices and filled with cheese in a medium sized tortilla. Flavours come out so beautifully, one can’t deny eating.

Ingredients
250 grams Beef mince
1 small Red bell pepper (chopped)
1 small Yellow bell pepper (chopped)
1 medium Onion (chopped)
1 medium Tomato (chopped)
20 grams Coriander (chopped)
200 grams Cheddar cheese (shredded)
150 grams Mozzarella cheese (shredded)
4 Medium sized tortilla
1 tablespoon vinegar
1 tablespoon soya sauce
1 tablespoon hot sauce
1 teaspoon Salt
1 teaspoon Black pepper
½ teaspoon Garlic powder
1 teaspoon Paprika powder
1 teaspoon Paprika powder
4 tablespoons extra virgin olive oil
How to Cook Beef Quesadillas
Cutting & chopping: Take a medium sized tomato, medium sized onion, small sized red, yellow bell pepper and 20 grams coriander leaves. Chop these all veggies finely and keep them aside for later use.
Cooking beef mince: In a pan take 3 tablespoons extra virgin oil. Heat it on a medium flame. Add 250 grams beef mince and cook it on high flame for 2 minutes. Once it turns golden brown, slow down the flame to low and cook for 20 minutes.
Adding veggies in cooked beef (Phase-1): Add chopped tomatoes, onions, coriander and red, yellow bell peppers one by one by sautéing each for 1 minute.
Adding other ingredients in cooked beef (Phase-2): Add ½ teaspoon garlic powder, 1 teaspoon paprika powder, 1 teaspoon salt, 1 teaspoon black pepper, 1 tablespoon vinegar, 1 tablespoon soya sauce and 1 tablespoon hot sauce. Mix it all and cook for 2 minutes and quesadillas filling is ready.
Arrangement & filling of tortilla (Phase-1): Take 200 grams cheddar cheese and 150 grams Mozzarella cheese in separate plates. Also keep beef mince mixture in a bowl along their side.
Arrangement & filling of tortilla (Phase-2): Time to take a medium sized tortilla add 50 grams beef mixture, some cheddar and Mozzarella cheese. Turn the tortilla to make it half and keep aside. Repeat for the other 3 tortillas.
Goldenizing tortilla & cutting: In a pan or griddle add 1 tablespoon extra virgin olive oil heat in on medium flame and cook filled tortillas from both sides until golden brown and crispy. Dish it out and cut each tortilla in 3 pieces, each making a quesadilla (triangular) shape.
Yummy cheesy beef quesadillas are ready to serve & eat. Enjoy!

- Amount of cheese completely depends on your taste. You can add more if you want more cheesy.
- Choice of veggies in beef mince mixture is optional.
